Stuffed Shells Recipe

Stuffed_Shells_Recipe_Cover

There’s something truly magical about a bubbling dish of stuffed shells fresh out of the oven. I made these last Sunday when the weather was gloomy and all I wanted was something warm, cheesy, and soul-hugging — and wow, did they deliver. I took one bite, then another… and before I knew it, I was back at the dish for seconds (and okay, maybe thirds!).

What makes this version so special? It’s that dreamy filling — creamy ricotta blended with garlicky sautéed spinach, brightened up with lemon zest and just a touch of heat from red pepper flakes. It’s the kind of recipe that feels fancy enough for company, but cozy enough for a weeknight dinner. And the best part? It’s super easy to prep ahead or freeze for later!

Whether you’re making this for a family dinner, a date night at home, or just to treat yourself — I promise, this one’s a keeper.

Ingredients

Here’s what you’ll need for this ultimate comfort food dish:

For the pasta and sauce:

  • 18–20 jumbo pasta shells
  • 2 cups marinara sauce (store-bought or homemade — I love Rao’s!)
  • Extra-virgin olive oil, for drizzling

For the filling:

  • 5 oz fresh spinach
  • 2 cups (16 oz) ricotta cheese
  • ¼ cup grated pecorino cheese, plus more for topping
  • 2 garlic cloves, finely grated or minced
  • 1 tsp dried oregano
  • 1 tsp lemon zest (freshly grated)
  • ¼ tsp red pepper flakes (optional, but highly recommended)
  • ¾ tsp sea salt
  • Freshly ground black pepper, to taste

For serving:

  • More marinara sauce, warmed
  • Fresh chopped parsley
  • Extra pecorino or Parmesan cheese

Instructions

1. Prep the oven and dish.

Preheat your oven to 425°F (220°C). Lightly oil a 9×13-inch baking dish and spread 2 cups of marinara sauce across the bottom.

2. Steam the spinach.

Place the spinach in a steamer basket over a pot with 1 inch of simmering water. Cover and steam for about 1–2 minutes, until it’s wilted and vibrant green.

Tip: No steamer basket? Just sauté it in a pan with a splash of water.

Transfer to a clean kitchen towel and squeeze out all excess moisture — seriously, get as much water out as you can. Then chop it finely.

3. Cook the shells.

Bring a large pot of salted water to a boil. Add the jumbo shells and cook just shy of al dente — about 9–10 minutes.
Drain and drizzle with olive oil to keep them from sticking. Let them cool slightly so you can handle them comfortably.

4. Mix the filling.

In a medium bowl, combine the chopped spinach, ricotta, pecorino, garlic, oregano, lemon zest, red pepper flakes, salt, and a few grinds of black pepper. Stir well until smooth and creamy.

5. Stuff the shells.

Using a small spoon (or a piping bag if you’re feeling fancy), fill each shell with a generous spoonful of the ricotta mixture. You should have enough for 18–20 shells.

Don’t worry if some filling spills out — mine looked a little messy, and they still turned out beautifully!

6. Assemble and bake.

Nestle the stuffed shells into the saucy baking dish. Cover tightly with foil and bake for 20 minutes.
You’ll know it’s ready when everything is hot, the sauce is bubbly, and the edges start to look a little golden.

7. Finish and serve.

Remove the foil, sprinkle with extra pecorino and fresh parsley, and serve hot with warmed marinara on the side.

Tips & Tricks

  • Use good-quality ricotta – It really makes a difference! Look for one that’s thick and creamy, not watery.
  • Squeeze that spinach well! Wet spinach can make the filling runny and dilute the flavor.
  • Don’t skip the lemon zest – It adds such a lovely brightness that cuts through the richness of the cheese.
  • Want to add protein? Mix in a handful of sautéed mushrooms or some crumbled cooked Italian sausage.
  • Add cheese on top – Want it extra cheesy? Sprinkle mozzarella on top before baking for a golden, bubbly crust.

Storage and Serving Suggestions

To Store:

Keep leftovers in an airtight container in the fridge for up to 4 days. Reheat in the oven or microwave with a spoonful of extra marinara to keep them moist.

To Freeze:

Assemble the dish fully (without baking), cover tightly with foil, and freeze.
When ready to use, thaw in the fridge overnight and bake covered at 425°F for 30–35 minutes, until heated through.

To Serve:

Pair with a fresh salad (I love arugula or Caesar) and some crusty garlic bread. It also goes beautifully with roasted veggies or a light red wine.

FAQs

Can I use frozen spinach?

Yes! Use about ½ cup cooked and squeezed frozen spinach. Just make sure it’s well-drained before mixing into the filling.

Can I make these in advance?

Absolutely! Assemble the shells, cover, and refrigerate for up to 4 hours before baking. Super handy for dinner parties.

What’s the best sauce to use?

A good marinara is key — I love Rao’s for a store-bought option, or you can use homemade if you have the time.

I hope these stuffed shells bring as much joy to your table as they did to mine. They’re warm, satisfying, and full of that homemade magic that just makes everything feel a little more special. Let me know if you try them — and don’t be surprised if you find yourself going back for seconds too!
